Or they follow the iPad's system sample rate instead of the host/DAW. some are locked at 44.1kHz & don't change if the host/DAW is at 48kHz. In any case, switching back to PM for sonic reasons, which required a computer restart and now magically got the sample rate set correctly, I really did find. I believe Airplay 2 gives you audio access to every app on iOS.
